Blueberry Coconut Protein Bar

Happy Wednesday friends! I hope your having a great week so far! I thought it would fun to start a recipe series for February. After asking you on Face Book what type of recipe you would like to see, it was a tie between quick dinners and healthy snacks. I decided to create a protein packed bar recipe that can be eaten on the go! This recipe combines two of my favorite flavors- Coconut and Blueberry. These bars can be made ahead and either frozen or kept in the refrigerator for up to 5 days. I had my hubby taste test for me on Monday and he gave it 2 thumbs up! I hope you enjoy!

Blueberry Coconut Almond Protein Bars

Serves: 6-8 bars
Ingredients
  • ¼ cup vanilla protein powder
  • ½ cup coconut flour
  • ½ tsp. baking powder
  • ⅓ cup unsweetened coconut flakes
  • 3 eggs
  • 1 ½ tsp. coconut oil, melted
  • Juice of 2 lemons
  • 1 TBS vanilla extract
  • 2 TBS plain Greek yogurt
  • 1 mashed banana
  • ¼ cup water
  • 2 cups fresh blueberries
  • Icing:
  • 2 TBS fat free lemon Jello pudding mix plus enough water to make an icing consistency
Instructions
  1. Mix all dry ingredients together
  2. Add in wet ingredients.
  3. Fold in your blueberries at the end.
  4. Pour batter into a lightly oiled or non-stick 8X8 baking dish.
  5. Sprinkle additional coconut flakes on top if desired.
  6. Bake at 350 degrees for 20-25 minutes. (Depending on your oven, it could take more or less time to bake).
  7. Allow your bars to cool.
  8. Slice into 6 or 8 bars.
  9. Icing is optional but delicious!

  1. I made these this morning. They are yummy! Do you have any suggestions to get more of a lemon flavor? The banana seemed to overpower the lemon. Great flavor overall. I just LOVE lemon!

    • Hi Karen! So glad you enjoyed the muffins. I would suggest adding about a 1/2 tsp of lemon extract to the batter or some extra lemon juice! Give it a try and let me know what you think!
