Sweet Potato Pecan Frozen Yogurt

Serves: 6 servings
  • 8 oz Fage non-fat plain greek yogurt
  • 4 oz mashed sweet potato
  • ½ cup unsweetened cashew or almond milk
  • 1.5 TBS Glean Sweet Potato Flour
  • ¼ cup sweetener( I used stevia)
  • 1 tsp. vanilla exdtract
  • 1½ tsp. cinnamon
  • ¼ cup chopped pecans
  1. Place all the ingredients (except the pecans) into a food processor.
  2. Mix until combined.
  3. Gently stir in the pecans.
  4. Add mixture to a freezer safe container or shallow freezer safe dish.
  5. Freeze for about 3 hours or overnight.
  6. Note: Remove from the freezer at least 15-20 minutes before serving to allow the yogurt to soften.
