Mixed Berry Protein Muffins

Serves: 9 muffins
  • 2 cups Castle Kitchen Protein Packed Plain Jane Vanilla Pancake & Waffle Mix
  • 1 egg
  • ⅔ cup unsweetened cashew or almond milk
  • ⅓ cup lemon meringue greek yogurt(I used Dannon Light & Fit)
  • 3 TBS honey, melted
  • ¼ cup coconut oil, melted
  • 1 cup mixed berries, fresh or frozen (blueberries, raspberries)
  1. Preheat oven to 350 degrees.
  2. Lightly grease a muffin tin and set aside.
  3. In a mixing bowl add pancake mix, egg, milk and yogurt.
  4. In a small bowl, melt honey and coconut oil together in the microwave in 30 second increments.
  5. Stir the coconut oil and honey mixture into the pancake batter.
  6. Gently fold in the berries.
  7. Scoop batter into muffin tins about ¾ full.
  8. Bake for 18-20 minutes.
  9. Allow the muffins to cool or enjoy while warm.
