Blueberry Lemon Cookies

  • 1 cup oat flour
  • 1 tsp baking powder
  • ⅓ cup Swerve granulated sweetener
  • 1 tsp. sea salt
  • 1 container Dannon Light and Fit Lemon Meringue
  • 2 egg whites
  • 2 tsp. lemon juice
  • ½ cup blueberries
  1. Preheat oven to 350°F.
  2. Line baking sheet with a silicone liner or parchment paper.
  3. Combine flour, baking powder, sugar and salt in a large bowl.
  4. In a separate bowl, add greek yogurt, egg whites, and lemon juice; stir until combined.
  5. Add the wet ingredients to the dry and mix.
  6. Gently fold in the blueberries.
  7. Drop cookie dough by rounded tablespoons onto prepared baking sheet.
  8. Bake for 10-12 minutes or until slightly golden around the edge,
  9. Remove cookies from oven and let cool on baking sheet for two minutes.
  10. Transfer to a cooling rack and cool completely.
  11. Store in the refrigerator for up to 5 days.
