Creamy Tomato Basil Soup

Serves: 6 bowls
  • 1 TBS light butter
  • medium sized onion, finely diced
  • 1 clove garlic, chopped
  • (28-ounce) crushed tomatoes
  • ½ cup chicken broth
  • 1.5 cups half and half
  • 2 tablespoons basil, chopped
  • Toppings:
  • ¼ cup shredded parmesan cheese
  • chopped basil, for garnish
  1. Melt butter in a medium sized stockpot.
  2. Add onion and garlic clove; sauté until tender.
  3. Add crushed tomatoes, chicken broth and basil.
  4. Use an immersion blender to puree the soup until smooth.
  5. Reduce heat to medium low and allow to simmer for about 8 minutes.
  6. Gently stir in your half and half.
  7. Season with salt and pepper.
  8. Add shredded parmesan cheese and fresh basil for garnish!
  9. Serve with your favorite sandwich!
