Buffalo Chicken Sloppy Joes

  • 1 lb ground chicken(93% lean)
  • 2 tsp olive oil
  • ¼ cup vidalia onion, diced
  • 1 cup diced carrot and celery mixture
  • 6 oz can tomato sauce
  • 1 TBS tomato paste
  • ⅓ cup buffalo wing sauce
  • ½ tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • salt and pepper to taste
  • small container blue cheese crumbles
  • rolls, for serving
  1. Heat oil in a saute pan over medium heat.
  2. Add onions, carrot and celery and a pinch of salt.
  3. Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
  4. Add the ground chicken, and cook until done, breaking up the meat as it cooks.
  5. Stir in the spices, tomato sauce, wing sauce, and tomato paste, and simmer for several minutes, until heated through.
  6. Spoon onto rolls and top with blue cheese crumbles.
