Happy Friday friends! I was recently introduced to Binnie’s Coconut Butter through a social media contest. I was sent all three flavors to try. Today, I’m sharing my full review with you!
A little about Binnie’s Coconut Butter…
Created by mother of two Lindsay Binnie, I can relate to her story all too well. After dealing with some food sensititivities, she committed herself to finding better ways to nourish both herself and her family. She came across an article for coconut butter and realized this was a spread that her children could enjoy; especially if it had flavors like vanilla and cinnamon. In fact she was right, her kids loved it and Binnie’s Coconut Butter was born!
Binnie’s Coconut Butters come in 3 delicious flavors; Dark Chocolate & Sea Salt, Very Vanilla and Simply Cinnamon. All of their coconut butters are gluten free, dairy free, soy free, vegan, organic and non-GMO. Their coconut butters use only real ingredients including organic shredded coconut, organic extra virgin coconut oil and organic agave nectar.
Let’s jump into my review!
I decided to give my morning oatmeal a makeover. By adding just a small scoop of Very Vanilla to my apple walnut oatmeal, it took it to a whole new level in addition to adding healthy fats to my breakfast.
Unlike some coconut butters that are hard and crumbly, Binnie’s Butter is unbelievably creamy and very spreadable. Use it like you would peanut or almond butter, it makes the perfect topping for plain rice cakes with fruit and would also be delicious on sweet potatoes.
Simply Cinnamon has the perfect flavor balance between the coconut and cinnamon. Coconut butter is so versatile too! It’s amazing how many different ways you can incorporate it into your recipes! I decided to put this flavor to the baking test with some snickerdoodle cookies. These turned out delicious and very similar to a soft batch cookie. P.S. These will also make your kitchen smell like heaven!
- 2½ TBS butter
- 2 TBS Binnie's Simply Cinnamon Coconut Butter
- 1 TBS honey
- ¼ tsp sea salt
- 1 cup almond meal/flour
- Preheat the oven at 325 degrees.
- Microwave the butter, coconut butter, honey and sea salt for 45 seconds or until melted.
- Pour melted mixture into a medium sized mixing.
- Slowly add the almond flour and mix until well combined.
- Add parchment paper to a baking sheet.
- Using a tablespoon, form 4 large cookies.
- Place shaped cookies onto a parchment lined cookie tray.
- Bake for 12-14 minutes
- Allow the cookies to fully cool before moving them to a wire baking rack.
- ***This recipe can be doubled or even tripled
Dark Chocolate & Sea Salt
Satisfy your sweet tooth with the Dark Chocolate & Sea Salt. One spoonful in and I’m already all sorts of happy! Dangerously good, I’ve been enjoying a scoop of this for a mid-afternoon energy boost. This by far is my favorite of the three flavors!
I put this flavor to the baking test as well with a Dark Chocolate & Sea Salt brownie skillet. Top with your favorite ice cream and you have yourself quite the healthy dessert! No shame in my game, I devoured this myself but allowed the hubby one or two bites. Comment below if you want me to share the recipe in a future post!
