I’ve always been a huge fan of breakfast foods and will often serve them for various meals throughout the day. However, all breakfast foods are not created equal, especially the ones that are the most convenient. Thankfully, Castle Kitchen Foods is working to change all of that with their full line of pancake, waffle and hot chocolate mixes.
About Castle Kitchen:
It was in 2013 when Castle Kitchen Foods founder, Ken Kaiman, was shopping for pancakes with his 4-year-old son, who had invited his friends over for a weekend breakfast. Unable to find a healthy, allergy-free option with flavors kids like, Ken decided to do what any entrepreneur would do, he set out to create his own. His vision was simple. Make great-tasting, healthy food that everyone can enjoy, regardless of food restrictions or allergies. Ken’s belief that nothing should get in the way of friends and family sharing great food became the cornerstone of the Castle Kitchen brand and one that permeates every facet of his business today.
All Castle Kitchen products are GMO Free, dairy free, soy free, vegan, kosher and have no preservatives or artificial colors. They only use ingredients that are responsibly sourced and because they believe great food should always be safe, all of their manufacturing plants adhere to the highest food safety standards and operate within nut-free environments.
Although there are no dairy, eggs, soy or nut ingredients in any of the pancake & waffle mix products, they do contain gluten. Personally I’m hoping they eventually come out with a gluten free line or product so those that are gluten intolerant can also enjoy the mixes. However, it should be noted that the entire line of cocoa mixes are gluten free.

Plain Jane Vanilla Pancake & Waffle Mix
The first mix I tried was the Plain Jane Vanilla. I followed the recipe on the box (1 cup mix plus 3/4 cup water – what could be easier?) and decided to make waffles. One serving of the mix made two nice sized waffles. SO easy, SO fluffy, SO delish and delicately flavored with vanilla. They are the perfect vehicle for your favorite toppings, like some granola and fresh berries. And you better believe I drizzled lots of maple syrup on this stack after snapping this picture.
Let’s Go Banana Pancake & Waffle Mix
Upon opening the bag of this mix, I was immediately hit with the intoxicating scent of freshly baked banana bread. Since I wanted to share more than just pancake and waffle ideas, I went a bit bananas with this one (no pun intended!) and made Bananas Foster Doughnuts. Although the pancake mix is the star of the show, these doughnuts are infused with some intense flavor from the sautéed bananas and some spiciness from the cinnamon and rum extract. Overall, I’m quite impressed with how the mix bakes. My doughnuts came out soft, dense and full of rich banana flavor. Keep an eye out for this amazing recipe. I’ll be sharing it very soon!
Protein Packed Plain Jane Vanilla Pancake & Waffle Mix
This is Castle Kitchen’s protein based pancake & waffle mix. The protein source comes from lupin pulse flour(legume, think beans!) and pea protein isolate. Both are very neutral in taste and do not impact the flavor at all. With extra fresh berries on hand to use, I decided to bake up a batch of protein muffins. I can’t say enough about how much I appreciate the versatility of the mixes. These were a huge hit and gone in less than 24 hours. The muffins can be enjoyed as part of an energizing breakfast, a hearty snack, or a healthy dessert. I hope you try the recipe!
- 2 cups Castle Kitchen Protein Packed Plain Jane Vanilla Pancake & Waffle Mix
- 1 egg
- ⅔ cup unsweetened cashew or almond milk
- ⅓ cup lemon meringue greek yogurt(I used Dannon Light & Fit)
- 3 TBS honey, melted
- ¼ cup coconut oil, melted
- 1 cup mixed berries, fresh or frozen (blueberries, raspberries)
- Preheat oven to 350 degrees.
- Lightly grease a muffin tin and set aside.
- In a mixing bowl add pancake mix, egg, milk and yogurt.
- In a small bowl, melt honey and coconut oil together in the microwave in 30 second increments.
- Stir the coconut oil and honey mixture into the pancake batter.
- Gently fold in the berries.
- Scoop batter into muffin tins about ¾ full.
- Bake for 18-20 minutes.
- Allow the muffins to cool or enjoy while warm.
Classic Caramel Dark Chocolate Cocoa Mix
Although I was sent all four cocoa flavors, I was most excited to try the Classic Caramel Dark Chocolate. Since it’s pretty warm here in North Carolina right now, I opted to use the mix in a recipe versus going the traditional hot chocolate route. I thought to myself “what could I make with this?” I came up with a recipe for Chocolate Caramel Hot Cocoa Brownies, and yes, they’re as good as they sound. The sweet scent and flavor of caramel comes through and gives the brownies an extra oomph over regular chocolate ones. I’ve got my eye on trying the Marvelous Mint flavor next, so keep an eye out for more recipe ideas!
The brownies turned out so ooeey,gooey and delicious!
So, if you are looking for a quick and healthier alternative to your typical pancake, waffle and hot chocolate mixes, it’s definitely worth giving Castle Kitchen a try. This is a product you can feel good about using and enjoy eating.
