Friday Food Finds- Hungryroot Review

Happy Friday friends! How was your Thanksgiving? Mine was filled with family, lots of food and laughter! Who is taking in some Black Friday shopping today? Not this girl- I will safely shopping online from the comfort of my own home!

Now that we’re all in a carbohydrate coma, it’s time to focus on some lighter food options today. In this week’s Friday Food Finds, I’m sharing my review for Hungryroots.

My vegetable noodle love affair continues to grow, I recently had the opportunity to try an up and coming New York based food product called Hungryroot. Having my own recent love affair with my Kitchen Aid spiralizer, the thought of having a company that makes them individually boxed with the topping and sauce delivered to my door, I was definitely intrigued. I contacted Hungry Roots and Zoe was kind enough to send me some of their top sellers to try.

HUNGRY ROOTS PICTUREI received the Root Risotto, Sweet Potato Cacao Mousse and the Carrot Noodles with Tangy Sriracha Peanut Sauce to try.

What is Hungry Root? Hungryroot is a brand of fresh, all natural convenience foods. They offer simply craveable meals, sides and sweets that are packed with protein, fiber and nutrients and are all ready-to-eat in under 7 minutes.

Is Hungryroot healthy? All Hungryroot products are vegetable and plant-centric—they use raw vegetables instead of processed flour to create their noodle dishes, chickpeas instead of eggs and butter to create gooey cookie dough, and vitamin-rich cauliflower instead of rice to deliver a feel good couscous. As a result all of their products are all naturally nutritious, gluten-free and preservative-free.

CARROT PACKAGEThe Carrot Noodles come with a homemade Sriracha Peanut Sauce and  Peanut Chimmichurri(can you say YUM!) and pickled Daikon. Look at how fresh everything looks! I was already impressed and I had not even tasted them yet!  This meal can be prepared in 7 minutes and own to your plate in several seconds! One container is under 500 calories, gluten free, dairy free and rich in Vitamin A.

HUNGRY ROOTS CARROTI chose to prepare mine in the microwave. Peel back the NatureFresh plastic, top carrot noodles with sriracha peanut + chimichurri + grilled chicken + 2 tbsp of water. Heat on high for 3 minutes, mix then cook an additional 1-2 minutes as needed.  My hubby and I enjoyed this as an appetizer versus meal. I was preparing scallops that evening and it was perfect on top of the noodles! The carrot noodles had a hearty texture.  I love sriracha and can put it on anything so I knew I would like the sauce.  This sauce gave a little bit of heat but had so many other great flavors balancing it out too. I couldn’t really taste the mint too much in the Chimichurri but there was a slight sweetness that complimented the sriracha sauce well.
RISOTTO HUNGRY ROOTSNext up is the Root Risotto. I was a bit skeptical at first but after mixing in the homemade sauce- I was in love! The Root Risotto is finely chopped fresh carrot, celery root, rutabaga and sweet potato with a decadent sauce made of apple butter, coconut flour and thyme.  The entire container is 275 calories and would pair perfectly with any entree.  You could also enjoy this a healthy and nutricious alternative to breakfast

HUNGRY ROOT RISOTTO #2Again, very simple to prepare. This one I did on the stove top. Heat 1 tsp olive oil, a pinch of salt in a large skillet over medium high heat. Cook the vegetables for 1 minute, then add 1/2 cup water and cook for an additional 4-5 minutes until the water has almost evaporated, stirring frequently. Stir in the thyme apple butter and turn off the heat. This paired beautifully with some grilled salmon.

HUNGRY ROOT SWEET POTATOWhat meal is complete without dessert. Hungryroot offers sweet treats. This is their Sweet Potato Cacao Mousse.  The mousse is simply roasted sweet potatoes, coconut milk, and cacao powder that is blended into a light and airy, decadent mousse.

They also offer an Almond Chickpea Cookie Dough and Coconut Carrot Cake Bites.  I’m dying to try them both since they sound absolutely amazing!

Overall, I was very impressed with Hungryroot. The meals stay fresh for up to 10 days from when they ship.
Plus, they would be great to have on-hand when you know there is a busy week ahead or even to take to work since they are microwavable too.
