Friday Food Finds – Nui Cookie Review

Is there anyone in the world who doesn’t love cookies? With the holidays approaching, cookie season is already starting. I’ll be the first to admit that I love making my own cookies. But, sometimes I just don’t have the time. That’s why I was so excited to try Nui Cookie!

About Nui:

Founded in 2016 by Kristoffer Quiaoit and Victor Macias, the two discovered all the benefits of going on a low carb, low sugar diet. They felt amazing – from having more energy to Victor losing 40 pounds. It was amazing until they realized how hard it is to cut out sugar. Sugar was in everything: donuts, brownies, and especially in their biggest weakness, cookies. The two joined forced in the kitchen and began working on the world’s first keto friendly cookie. After twenty something tries, they finally created a cookie that was low carb, low sugar, and most importantly – delicious. They received such positive feedback that they decided to sell them.

You might remember this company as Keto Kookie. The company decided to rebrand and change their name to Nui since they wanted to reach more than just the Keto community. Nui which means standing for greatness and abundance, provides people with a valuable tool to make a healthier lifestyle change in favor of a low carb and low sugar diet.

Why Nui?

Nui Cookies are made with grassfed butter, coconut oil, and MCT oil for flavor and a burst of energy. They are non GMO, gluten-free, low glycemic, keto friendly, low carb and contain no added sugars. The cookies are sweetened naturally with Erythritol and Monk Fruit Extract which when when combined, taste just like sugar but without the sugary consequences.

NUI cookies comes in five different flavors: Chocolate Chip, Cinnamon Snickerdoodle, Double Chocolate, Birthday Cake, and Peanut Butter. They sent me samples of the Chocolate Chip and Peanut Butter to try.

Here’s how they tasted! 

Chocolate Chip

Soft in texture and rich & buttery in taste, I immediately picked up on how sweet this cookie was. For me, this is definitely a positive. However, if you are not used to eating keto treats, you may not be accustomed to such an intense level of sweetness. That in addition to what I can only best describe as a “cooling effect”(which is the mouth feel that can often be associated with using erythritol) was slightly noticeable but did not detract at all from the flavor of the cookie. Similar to my childhood favorite, the classic Chips Ahoy(sans the added sugars), Nui was also quite generous with the amount of chocolate chips. Although a serving size is two cookies, these cookies are rich and I felt satisfied enjoying just one.

Nutritional Profile: 2 cookies per serving: 250 calories: 24g fat, 6g protein, 1g sugar, 20g carb(3g fiber and 13g erythritol) = 4g net carbs.

Peanut Butter

The peanut butter cookies were softer and more delicate than the chocolate chip. In fact, I had to be careful removing the cookies from the package since they have a tendency to crumble easily. The peanut butter flavor stands out and the softer texture makes this cookie practically melt in your mouth. Similar in sweetness to the chocolate chip, these reminded me of the peanut butter sugar cookies I make at Christmas time.

Pro tip: The peanut butter cookies are delicious; especially when adding a scoop of Enlightened Peanut Butter Chocolate Chip on top for an ice cream cookie sandwich.

Nutritional Profile: 2 cookies per serving: 270 calories: 24g fat, 8g protein, 1g sugar, 18g carb(3g fiber and 11g erythritol) = 4g net carbs.

Overall: Nui Cookies are great little treats and will satisfy your cookie cravings whether you follow low carb, keto or just a healthy lifestyle. I’m excited to eventually try the other three flavors, and I definitely recommend trying Nui cookies for yourself. The Peanut Butter Cookie was my favorite but I LOVE peanut butter so I’m a bit biased.
