Friday Food Finds: Pancakes!

Pancakes are definitely high on the food chain for me these days. As much as I love making my own pancakes from scratch, I was very excited for the opportunity to try Stack’D Nutrition pancake mixes.

I was given 4 different flavors to sample- Original Buttermilk, KokoNut, Pumpkin Spice and Peppermint Mocha.

Original Buttermilk Pancakes

Friday Food Finds, buttermilk pancakesThis flavor did not disappoint! It’s slightly sweet with just hints of organic real maple syrup and organic Saigon cinnamon. My pancakes turned out light and fluffy. I simply drizzled a bit of caramel and maple syrup on this stack to enhance the flavors.

 

 

KokoNut Pancakes

Friday Food Finds, koko nut pancakesI decided to go with making a Koko Nut Maple version for my morning breakfast. This had just the perfect hint of coconut flavor with real unsweetened coconut flakes in the mix. In between each fluffy layer, I added a creamy coconut ricotta filling and topped it off with some maple syrup and extra unsweetened coconut flakes.

 

 

Pumpkin Spice Pancakes

pumpkin spiceI love pumpkin all year round so I could not wait to try this flavor!  It was the perfect balance and blend of cinnamon, nutmeg and ginger to create this amazing pumpkin spice flavor!  I added 2 tablespoons of extra pumpkin puree to my batter since I love pumpkin! This stack paired well with some homemade cranberry jam and maple syrup drizzled on top! This is a seasonal flavor so stock up now!

 

Peppermint Mocha Pancakes and Muffins

Friday food finds, peppermit pancakesI’m all about trying anything peppermint! This mix is the perfect blend of cocoa and peppermint. The peppermint flavor is not overpowering by any means. I decided to make some pancakes and some mini muffins.

Unlike most pancake mixes, Stack’d Nutrition does not contain any processed or refined grains, artificial flavors or sugars or preservatives. The nutrition for each mix is between 232-240 calories, 3 grams of fat, 4-5 grams of fiber, 7 grams of sugar, 26-28 grams of carbohydrates and 25 grams of protein per serving. All of their mixes have the same base of ingredients: 100% Organic Whole Wheat Flour, 100% Miscellar Casein Protein, Organic Buttermilk Powder, Gluten-free Organic Whole Oat Flour, Gluten-free Organic Coconut Flour/ Gluten-free Organic Almond Meal and Baking Powder.
