Friday Food Finds – Simple Mills Pumpkin and Chocolate Muffin Review

Happy Friday friends! No time to bake? No problem! Today, I’m going to make your life 100% easier by sharing my new secret weapon – Simple Mills baking mixes! You’ll love how easy the mixes are to use. All you need are a few pantry ingredients to get baking!

Simple Mills mixes are paleo-friendly, grain-free, dairy-free, soy-free and low carb, made in a dedicated gluten-free facility and are certified gluten-free.

Simple Mills follows what they call “The Simple Way.” They believe that if you don’t recognize an ingredient, chances are your body won’t either. So they stick to delicious, real-food ingredients that work hard for your body and nothing artificial.

Each mix is almond flour based, and is supported by healthy ingredients such as organic coconut flour, organic coconut sugar, cocoa, arrowroot, sea salt, as well as real flavors from real ingredients such as banana, pumpkin, and cocoa. In addition, all of the mixes are:

Pumpkin Muffin & Bread Almond Flour Mix

Sure enough, these mixes are so easy to use! It’s a simple as adding eggs, water, your choice of oil or butter (I used unsweetened applesauce) and the mix. Look at how ridiculously few ingredients there are in this mix: Almond Flour, Organic Coconut Sugar, Pumpkin, Arrowroot, Organic Coconut Flour, Organic Spices (Cinnamon, Nutmeg, Cloves), Baking Soda, Sea Salt. 

I do not exaggerate when I say that these are, or are quite nearly some of the best pumpkin muffins I’ve ever had. Moist, pumpkin-y, and perfectly sweet and spicy, Simple Mills hit these out of the park. I was able to squeeze twelve mini muffins and five donuts out of an entire box of mix. Two tasty desserts ready in under 20 minutes! You cannot beat that! One thing to note about the mixes is that they do not contain any preservatives, so once they are made they need to be stored in the fridge or freezer.

Chocolate Muffin & Cake Almond Flour Mix

Saving the best for last, the chocolate muffin and cake mix had the highest of expectations after seeing so many posts on social media. Once again, a simple ingredient list: Almond Flour, Organic Coconut Sugar, Cocoa, Arrowroot, Organic Coconut Flour, Baking Soda, Sea Salt.

I love brownies and decided to bake some Black Forest brownies with the mix. In great anticipation, I ate my first brownie still warm from the oven. The brownies had an incredibly indulgent chocolate taste, but were not overly sweet. As far as texture goes, they were so moist and cakey! Run to your kitchen and bake these delicious gems fast!

Black Forest Brownies

Recipe type: Dessert, Snack
Serves: 9 brownies
  • 3 eggs
  • 1 TBS vanilla extract
  • 3 TBS unsweetened applesauce
  • ¼ cup water
  • 1 box Simple Mills Chocolate Muffin/Cupcake Mix
  • ⅓ cup no sugar added cherry pie filling or fresh chopped cherries
  • ⅓ cup Lily's Dark Chocolate Premium Baking Chips
  1. Preheat the over to 350 degrees.
  2. In a medium sized bowl, whisk together the eggs, applesauce and vanilla extract.
  3. Next, add the contents of the baking mix along with the water to the egg mixture.
  4. Stir until well combined.
  5. Fold in the cherries and chocolate chips.
  6. Pour batter into a 9X9 baking pan that has been sprayed with coconut oil.
  7. Bake for 25 minutes.
  8. Allow to fully cool before cutting into squares.

Delicious, Simple, and Nutritious.

Overall, I’m really impressed with the Simple Mills baking mix line. If you were to take a look into my pantry, you would find 5+ boxes of Simple Mills products.

  1. OOOOH these mixes sound awesome! I especially love your Black Forest Brownies recipes (chocolate + cherries = definitely a winning flavor combination). Haven’t tried any of their products, but I will be on the lookout for them; and I can’t wait for your upcoming reviews with more of their mixes! Speaking of mixes – have you heard of Good Dee’s brownies/blondies mixes? I just purchased some (they also have to be stored in the fridge). HAPPY FRIDAY!!! xo

    • I know you love to do your own baking, but these are amazing if you need something in a pinch or a last minute party. I have several friends and clients that do not enjoy baking, so this is perfect for them! I have heard of Good Dee’s baking mixes! I actually did a review on her chocolate chip cookie mix!
