Good morning and happy Friday my friends! I hope your day is off to a good start and that you have some fun plans awaiting you this weekend. What is it about Fridays that instantly lift my mood? Friday is, without a doubt, my favorite day of the week. I love the anticipation of weekend fun and I feel like everyone is a little happier on a Friday!
Now it’s time to kick things off the way we always do on Fridays and dive into this week’s Friday Food Finds. For those of you new to my blog, Friday Food Finds is all about sharing a new and fun food find with my followers! This week, I’m sharing my review for Tiger Nuts. So, what are tiger nuts? According to the company’s website, Tiger Nuts are actually NOT nuts, they are a tuber that grows below the ground’s surface. They have all of the nutrients and energy benefits of nuts and then some, but without the stuff that can adversely affect allergies. They boast a wide range of health benefits, such as promoting heart health, boosting immunity, aiding in digestion, helping to curb cravings, as well as providing positive effects on cholesterol levels. They are high in fiber as well as many vitamins and minerals, and are gluten-free, vegan, and certified USDA organic. Also, because they are a tuber, they’re safe for people with nut allergies. Premium Organic Tiger Nuts
Tiger Nuts offers two varieties, unpeeled and peeled. You can enjoy the unpeeled straight out of the bag. I would suggest soaking Tiger Nuts in water 12-24 hours to soften and enhance the flavor. Supreme Peeled Tiger Nuts
The Supreme Peeled are about the size of a pea and are pale blonde color since the skin has been removed. This makes them much easier to chew, and also sweeter overall. They have a woody and nutty taste similar to coconuts, that gets sweeter as you chew. I have to admit I was not a fan at first, but the second time around they actually grew on me. and I really liked them.
Tiger Nut Flour
I’m always on the lookout for new grain-free flours to experiment with so I was more than excited to give this one a try. Of course, my first recipe had to be for pancakes. These came out super moist and fluffy. I enjoyed these so much that I thought I would share my recipe with all of you!
- 30 grams Tiger Nuts Flour
- 1 TBS Coconut Flour
- ¼ tsp baking soda
- 2 whole eggs
- ¼ cup cashew milk
- 1 tsp. cinnamon
- ½ tsp. apple cider vinegar
- Add all of your dry ingredients to one bowl.
- Stir until all clumps are out of the flours.
- Add your wet ingredients in a separate bowl.
- Add the wet to dry and stir until well combined.
- Allow the batter to sit for about 1-2 minutes.
- Cook pancakes as usual.
- Enjoy with your favorite toppings!
I also made a batch of Pumpkin Spice muffins. Once again, very fluffy, moist and flavorful. Keep your eye out for the recipe, I will be sharing it very soon! The flour is very versatile and can be used as a healthy alternative to your traditional flours. You can also use it for cookies, brownies, cakes and even pizza dough!
Tiger Nuts are a really great snack for health-minded people, and a great gluten-free option as well. If you’re looking for something new or different to try, I would absolutely recommend them.
