I was sent 3 of their baking mixes to try: Lemon Poppy Muffin Mix, Vanilla Cake Baking Mix and the Brownie Mix!
Gluten Free Brownie Mix
I could not wait to make the brownies! The brownie mix is wheat, gluten, egg, dairy, casein, peanut, nut and corn Free. These are super easy to prepare. The recipe calls for adding butter (non-dairy or dairy), flax meal (or egg) and water. I used an egg and substituted the butter with coconut oil. Simply mix and bake for around 28 minutes. I was pretty impatient while waiting for these to cool! I topped mine with a scoop of espresso gelato! Match made in heaven- coffee and chocolate! This made 9 really good sized brownies.
Lemon Poppy Muffin Mix
Lemon has always been one of my favorite flavors. The muffins were easy to make and tasted great. Simply add your oil of choice( I used coconut), lemon juice, and non-dairy milk (I used cashew) in a bowl and stir in the mix by hand. Baking doesn’t get easier than this. The lemon flavor was perfect! I baked mine a little longer than the directions. These muffins came out moist and delicious. The mix made 6 nice size muffins. I decided to top a few of the muffins with a vanilla lemon icing.
The Vanilla Cake mix is both vegan & gluten free but tastes just like regular vanilla cake but even better. The vanilla flavor is DELISH and this came out super fluffy and moist. This is seriously really good stuff. I made a whipped cream cheese icing for the cake. The icing was simply confectioners sugar creamed with some reduced fat cream cheese. The true test was with my husband. He raved about this cake and could not believe it was vegan!
My final thoughts:
I really liked how each of the mixes came together quickly, needed minimal additional ingredients, were organic, non-GMO, and healthier than a lot of allergen-friendly mixes.
