In case you haven’t noticed, I’ve been on a bit of cookie dough making kick lately. With the holidays coming up, I thought a red velvet version sounded perfect.

Since I wanted to stay away from using artificial red food coloring or dyes, I opted to use one of my favorite superfood ingredients –  beet powder! Using Glean Beet Powder not only provides the vibrant red color for my cookie dough, but also adds a whole host of nutritional benefits. One tablespoon of beet powder is like the equivalent of eating three medium-sized beets plus contains vitamins A, B6, and C, magnesium, folate, potassium, iron, calcium, and healthy antioxidants.

 This single serve cookie dough recipe is easy enough to make every day!

The rest of the cookie dough ingredients are pretty straightforward. In addition to the beet powder, you’ll need almond flour, cocoa powder, collagen powdersweetener, vanilla extract, cashew milk and white chocolate chips. Pretty easy – right?!

This cookie dough is delicious on its own, but especially fun to eat when you add chocolate chips. I used white chocolate chips to stay true to traditional red velvet flavor combinations. But feel free to throw in any type of chocolate chip or even a cream cheese swirl!

If you’re all about chilled cookie dough, stick your tasty creation in the refrigerator for 10 to 20 minutes. Otherwise, you can eat it up as soon as the chocolate chips are added. How’s that for a quick and easy dessert? Enjoy the recipe!

Ingredients
  • ¼ cup almond flour( I used Barney Butter unblanched)
  • 1 TBS beet powder( I used Glean)
  • 1 TBS unsweetened cocoa powder
  • 1 TBS collagen(I used Further Food)
  • 1 tsp. vanilla extract
  • ¼ cup plus 2-3 TBS unsweetened almond or cashew milk
  • 2-3 TBS sweetener(I used Sugar 2.0)
Instructions
  1. In a medium sized bowl, stir together almond flour, beet powder, cocoa power, collagen and sweetener.
  2. Whisk the dry ingredients to ensure no lumps.
  3. Add vanilla extract and slowly drizzle in your milk.
  4. Add and stir until you reach your desired consistency.
  5. Fold in white chocolate chips.
  6. Eat and enjoy!
