What I Ate Wednesday – Single Serve Strawberry Cake

Happy Wednesday friends! I hope your having a wonderful week! I am so happy to share this Single Serve Strawberry Cake recipe that comes together in 5 minutes, is healthy, protein packed and SO fluffy!

For those not familiar with my What I Ate Wednesday posts, I (try to) take photographs of each item of food I eat a for an entire day. To be honest, my favorite part of WIAW is hearing from you. Food is a wonderful way to connect with people, so let’s sneak a peek at this week’s What I Ate Wednesday and some of my favorite meals and snacks from last week.

Breakfast: My new found love of quinoa pancakes. I found this recipe on a friends Instagram page. Talk about volume in your pancakes – whoa baby these were so fluffy and tasty!

Lunch: I’m a huge fan of Outer Aisle veggie sandwich thins. This was a turkey, cheese and spinach sandwich topped with my homemade cranberry jam. In the background is some roasted maple cinnamon kabocha squash.

Ready, set, go- Let’s make a Single Serve Strawberry Cake!

Do you like strawberries? Do you like cake?  Do you like dessert?  If you answered yes to any of those questions you will love this recipe. It is every bit as delicious as it looks, but far healthier than you could imagine! For me, this was more like a strawberry shortcake. You can add your favorite flavorings and berries of your choice to make this a delicious treat. This made for a very filling afternoon snack but could just as easily be a breakfast or dessert too!

Ingredients
  • ½ scoop PEScience Vanilla protein powder(you can use any vanilla - I prefer this one for baking)
  • 3 TBS Almond Flour
  • 3 TBS Coconut Flour
  • ⅛ tsp baking powder
  • 3 medium strawberries, diced
  • 3 TBS liquid egg white
  • 2 TBS plain non-fat greek yogurt
  • 2 TBS unsweetened almond or cashew milk
  • 1 TBS stevia
  • Vanilla Icing:
  • 2 TBS plain non-fat greek yogurt
  • 1 TBS vanilla protein powder
  • 1 TBS unsweetened cashew or almond milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a small ramekin with coconut spray.
  3. Add liquid egg whites, yogurt, and milk into a small bowl.
  4. Whisk until smooth.
  5. Add the remainder of the ingredients into the bowl.
  6. Stir until well combined and there are no lumps from the flours.
  7. Pour batter into your prepared ramekin.
  8. Bake for 35 minutes.
  9. While your cake is cooling, prepare your icing.
  10. Spread on top, add sprinkles, more strawberries or your favorite toppings.

 

Dinner:  Scallops topped with a pineapple mango salsa made my taste buds sing! I picked up my fresh sea scallops from Trader Joe’s – honestly the quality cannot be beat!

Dessert: I’ve been having a blast reviewing the new Arctic Zero flavors. The Brownie Blast was incredible! The brownie chunks were sweet, buttery, and rich, which added some decadent appeal to the ice cream. I loved this one the most and will definitely be making this a staple in my freezer!

  1. I too love the Outer Aisle Gourmet products (just received my latest shipment of the pizza crusts a few days ago – yay!). And LOVE LOVE LOVE your cake recipe! Especially since it uses one of the PEScience flavors that I ordered and also received in the mail recently, haha. Strawberries are definitely one of my favorite fruits.
