What I Ate Wednesday And An Enlightened Giveaway!

Happy Wednesday friends! I know it’s only Wednesday but I’m totally living for the weekend already!  This week’s What I Ate Wednesday are some of my favorite treats and meals from last week! 

Breakfast: Blueberry and Lemon Stack’D pancakes. I had just purchased a large container of blueberries at Costco and could not wait to use them in my pancakes. Blueberry and Lemon make the most amazing pancake combination! You need to try this!

Morning Snack: I finally tried the Muscle Pharm Combat Crunch bar in Cinnamon Twist. The company was nice enough to send me a sample bar to try. When I opened up the bar, it smelled like a freshly baked Cinnamon Bun from a bakery! They are soft in the middle with crunchy bits on the outside and the taste is phenomenal!

Lunch:  I was craving a healthy broccoli slaw and came up with this idea using Hilary’s Eat Well Apple Fennel Dressing. I topped my slaw with a Hilary’s Eat Well toasted Adzuki Bean Burger. This slaw has the perfect balance of sweet and tart.  I hope you enjoy the recipe!

Broccoli Slaw with Apple Fennel Dressing

Serves: 6 - ½ cup servings
Ingredients
  • 1 bag Broccoli Slaw Mix
  • 3 TBS non-fat plain greek yogurt
  • ¼ cup low sugar craisins
  • ¼ cup sunflower seeds
  • ¼ cup Hilary's Eat Well Apple Fennel Dressing
Instructions
  1. In a large bowl, add your broccoli slaw
  2. Whisk together the greek yogurt and apple fennel dressing.
  3. Pour the dressing over the broccoli slaw and stir to combine.
  4. Gently stir in your craisins and sunflower seeds.
  5. Allow mixture to sit overnight or for 3-4 hours to allow flavors to meld.
  6. To make this a complete meal, add a Hilary's Eat Well Adzuki Bean Burger or your favorite protein.

 

Afternoon Snack: Do it yourself Cinnamon Roll Cookie Butter using a B- Up Cinnamon Roll bar!  This creamy cookie butter was the perfect topping for my rice cakes. Sprinkles are optional but highly recommended! Dinner: Wild Caught Tilapia lightly drizzled with My Coconut Kitchen Lemon Kiss over coconut infused jasmine rice. I’m obsessed with anything lemon and this was perfect on a light fish like tilapia.
