Happy Wednesday friends! I will be starting a new weekly blog called What I Ate Wednesday where I will be sharing some of my favorite weekly eats. This week’s What I Ate Wednesday is focused around some of the amazing food I ate in North Carolina. My husband and spent a few days vacationing in the beautiful Wilmington North Carolina area last week. Part of the whole vacation experience is exploring and finding great restaurants. We had some pretty spectacular meals while we were there and was quite impressed with the food scene. We are total foodies when we travel so meals are pretty important to us!
The view from our room our first night in Ocean Isle Beach, North Carolina. It was quite overcast but who cares, its still the beach!
(Breakfast- Hotel) Each morning I had some scrambled eggs, egg whites, chocolate protein oats, fruit and some bacon. This was a nice change up from my daily pancakes!
(Lunch – The Bento Box) Huge portions and awesome sashimi. This also came with miso soup. It was very filling and quite delicious!
(Lunch- Brickside Landing Golf Course)- Greek Salad topped with Panko Crusted Haddock. This was loaded with feta cheese, black olives and cucumbers along with their homemade balsamic dressing. Who doesn’t love a good salad!
(Dinner- Catch) I had the Grouper over a sweet potato hash with baby kale. The hubby had the blackened Mahi Mahi topped with jumbo lump crabmeat over succotash, zucchini and baby carrots.
(Dinner- Catch) Our salad appetizer was a baby spinach salad with sweet potato, strawberries and goat cheese. I need to recreate this at home- it’s to die for!
(Dinner- Jerry’s) I enjoyed the Pecan and Bacon encrusted Red Snapper over Apple Sweet Potato mash with Bourbon Maple Dijon slaw. The hubby had the Goat Cheese encrusted Grouper over buttermilk mash with roasted red peppers. Both dishes were outstanding and I think we licked our plates clean!
(Evening Snack) – Microwave Casein Brownie drizzled with Crazy Richard’s Burst Performance Peanut Butter. Not the best picture nor does it look very appetizing. If you have not done a microwave brownie before, these are a great snack and prepared in 30-45 seconds.
I hope you enjoyed my first What I Ate Wednesday! This was a trip we both thoroughly enjoyed and plan to visit the area again very soon. The meals were too die for and the last I heard, calories never count when you’re on vacation!
