What I Ate Wednesday – Top 10 Recipes of 2015

Happy Wednesday friends! It’s hard to believe that 2015 is almost over and we’re just about ready to welcome in a new year! I’m so excited for 2016. Seems typical to say, but for me it’s so true. I’ve got big plans for the blog and myself. There’s nothing better than spending time on reflecting over the past year — the good, the bad and the things I should be doing more (or less) of.

In place of this week’s What I At Wednesday, I thought it would be fun to share a recap of the Top 10 Recipes of 2015!

Top 10 Recipes of 2015

From number 10 down to number 1- Here we go!

10.  Stuffed Salmon

This recipe is one of my favorites! It’s simple to prepare and really presents well at a dinner party! A simple blend of flavors is all you need for a fresh and fulfilling dinner in just 20 minutes.

9. Snickerdoodle Pancakes

This was the first time I ever made pancakes using Banana Flour! These were so moist and delicious!  I need to bring this recipe back in my life!

8. Carrot Cake Muffins

These muffins turned out so incredibly moist and light. The best part is the cream cheese icing!  You could also enjoy these as part of a healthy breakfast. Pair one of these muffins with something that has some protein and a healthy fat, like an omelet or some Greek yogurt.

7. Healthy Tuna Noodle Casserole

One of my favorite recipes growing up was Tuna Noodle Casserole. My lightened up version was a big hit this year with my readers!

6. Mango Chicken Burgers

These Chicken burgers were kicked up a notch with the addition of the mango and smokey BBQ sauce.

5. Pulled Pork BBQ

This recipe has less than 5 ingredients and can be set to go in the morning before you head out for your day! It has the perfect blend of smoky and sweet with a bit of a spicy kick from the cayenne pepper and chili powder!

4. Chicken Cacciatore

This will be the easiest Chicken Cacciatore you’ve ever made! Throw it in the crock pot and come home to the savory smells coming from your kitchen.

3. Blueberry Vanilla Cookies

Blueberry Vanilla cookies made using NutZez almond butter. I recall how thick and chewy these cookies were!

2. Carrot Cake Bread

Just looking back on this recipe makes me wish I had a warm slice in front of me right now. It’s wonderful topped with that cream cheese drizzle!

1. Butternut Squash Shepherd’s Pie

My #1 recipe from this year! Not a surprise at all! Shepherd’s Pie has always been near and dear to my heart since I was a child. This recipe gets made at least once a month in our house, especially the winter months.

Well- that’s a wrap for 2015! Thank you for enjoying, trying out and sharing my recipes!  I’m excited to see what 2016 brings from the kitchen!

Are there any specific recipes you would like to see in 2016! What are you plans for New Year’s Eve? Please share in the comments- I would love to hear from you!
