Happy Wednesday friends! Holy cannoli! I’m back from vacation relaxed, refreshed and ready to share some food!
So let’s talk cannoli! They are amazingly delicious but time consuming to make. Then it dawned on me, how perfect would it be to make a dip out of the insides! I served this at a recent cookout and was thrilled to see it was a huge hit. I cannot wait to share it with you today!
Before jumping into this fun recipe, here’s a peek at some of the deliciousness I stuffed my face with while on vacation last week!
Breakfast: Salted Caramel Quinoa Pancakes and turkey bacon was on the breakfast menu for a few days! If you have not tried Quest Salted Caramel protein powder, it is hands down one of the best to cook and bake with. I highly recommend adding this one to your protein collection!
Snacks: When I travel for vacation, there is no shortage of my favorite protein bars. As you can see, I like having a variety to choose from! I’ve been loving the Bhu Fit Salted Caramel bars! They are incredible. I reviewed Bhu Fit on the blog and will be sharing a future review on Detour bars. I love anything birthday cake flavored! I brought along some of the Oh Yeah One Bar, the Fit Elite and the single serve Lenny and Larry cookies. Who else loves that they now make a single serving cookie? I could never stop myself at half anyway, so these are perfect!
Lunch: Post workout eats! I am utterly obsessed with this meal and could eat it all day long! Grilled chicken, veggie and brown rice bowl with a touch of sugar free BBQ sauce. Who else uses mixing bowls to eat their food? We grilled almost everyday and I had plenty of chicken on hand for the week. This was such a huge portion and so filling!
Dinner: My brother in law was the grill master for the week! He did an amazing job cooking up halibut, shrimp, clams and veggies on the grill! This meal just makes me happy! I swear that all food tastes 110% better cooked on the grill!
This creamy and delicious Cannoli Dip is everything you love about a good cannoli blended in one tasty dip!
This cannoli dip is fantastic to serve at a party and it makes a great dessert, snack or appetizer. It’s everything you love about the sweet, cheesy filling of a cannoli turned into a dip! Serve it with mini rice cakes, cinnamon pita chips, grahams crackers or fruit! You could even use leftover dip(as if you will actually have any!) as a topping for waffles or pancakes! Enjoy!
- 16 oz low fat ricotta cheese, drained of liquid
- ⅔ cup vanilla greek yogurt
- 2 TBS vanilla protein powder
- 5-6 drops vanilla liquid stevia
- ¼ cup mini or regular chocolate chips
- in a medium mixing bowl, cream together the ricotta cheese, vanilla yogurt, and protein powder with a wooden spoon.
- Fold in the mini chocolate chips.
- Transfer to a small serving bowl.
- Garnish with more mini or larger size chocolate chips on top, if desired.
- Serve chilled with mini rice cakes, graham crackers, apple slices, strawberries, etc.
- Store any leftover dip in an airtight container in the fridge for up to 3 days.
