What I Ate Wednesday – Buffalo Chicken Sloppy Joes

Happy Wednesday friends! Looking for something quick yet tasty for your next weekend get together? I’ve got you covered. This week, I’m spicing things up a bit with this 20 minute recipe for Buffalo Chicken Sloppy Joes.

But first, let’s take a peak at some of my favorite eats from last week!

Breakfast

Nothing is better on a chilly rainy morning than waffles topped with warm apples and maple syrup! These pumpkin quinoa waffles have been a breakfast staple for me ever since my coach and friend @amber_fitfoodjunkie posted the recipe on her Instagram sometime ago. I love using quinoa, as it truly makes such fluffy waffles.

These Buffalo Chicken Sloppy Joes are so easy to make!

If you love all the flavors of buffalo chicken wings but prefer to get your fix in a healthier way, then this recipe is going to knock your socks off! These Sloppy Joes are perfect for an easy weeknight dinner or add them to your game day menu! Enjoy!

Buffalo Chicken Sloppy Joes

Serves: 4
Ingredients
  • 1 lb ground chicken(93% lean)
  • 2 tsp olive oil
  • ¼ cup vidalia onion, diced
  • 1 cup diced carrot and celery mixture
  • 6 oz can tomato sauce
  • 1 TBS tomato paste
  • ⅓ cup buffalo wing sauce
  • ½ tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • salt and pepper to taste
  • small container blue cheese crumbles
  • rolls, for serving
Instructions
  1. Heat oil in a saute pan over medium heat.
  2. Add onions, carrot and celery and a pinch of salt.
  3. Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
  4. Add the ground chicken, and cook until done, breaking up the meat as it cooks.
  5. Stir in the spices, tomato sauce, wing sauce, and tomato paste, and simmer for several minutes, until heated through.
  6. Spoon onto rolls and top with blue cheese crumbles.

Afternoon Snack

If your a fan of anything cherry and chocolate, you will enjoy Chocolate Dipped Cherry Cake Bites from Optimum Nutrition. They sort of remind me of those Little Debbie Cherry Cordial cakes I ate as a kid. The flavor is spot on and they actually tasted like a whipped chocolate covered cherry. Each 3-piece serving contains 20 grams of protein, 25 grams of carbs and 7 fats.

 

Dinner

We had dinner out for the hubby’s birthday at a really cool place that specializes in craft brews. My starter was a grilled romaine salad with crab and blue cheese that was truly amazing! The hubby selected a steak and I naturally went with the salmon.  My fish was served over some pesto(way too much pesto) mashed potatoes and a side of veggies.

 

Dessert

My local Vitamin Shoppe started to carry Halo Top ice creams. I’m a huge fan of anything Pistachio and went with this flavor. Much to my disappointment, there are no crunchy pistachio bits. The flavor is a bit lacking and the bright green color is almost too much. To add a bit more pizzazz to this dessert, I topped it with my 30 second G-Butter brownie and a drizzle of NuNaturals Cocoa Syrup!

  1. Oh wow, Sloppy Joes! Total nostalgia there – haven’t had one since a camping trip back in 1998, HAHAHA. Love the waffles, salmon (happy belated birthday to your husband!) – sorry about the excess pesto though; and I’m glad you liked the cake bites! Too bad that the Halo Top pistachio was lacking in flavor.
