Happy Wednesday friends! Looking for a fast, easy snack that’ll be a guaranteed hit for game day or your next event? Today I’m sharing one of my favorite recipes for Healthier Buffalo Chicken Dip. After all, what’s game day without a great dip?
Before we get into the recipe, let’s take a peek at some of my favorite eats from last week!
Coffee and warm slices of french toast topped with apples and caramel sauce is just what you need on a lazy weekend! I used this Caramel Apple bread from Pepperidge Farms. It’s so thick and holds up extremely well for french toast. It’s a limited edition but thankfully Target still keeps it in stock!
I’m always on the market to try new bars! Pro Supps My Bar in Salted Caramel Peanut Crunch did not disappoint! The texture is amazing; a good mix of softness and crunch. It tastes just like a snickers bar to me! The nutrition profile is pretty decent too: 20 grams protein, 17 grams carbohydrates, 10 grams fat and 1 gram fiber.
In case you are wondering, I have not yet run out of my favorite Autumn Harvest Bagels. I still have about 6 bags left in the freezer! If you are reading this Trader Joe’s, please take note and make this a regular item year round!
What’s game day without a great dip?
This simple Healthier Buffalo Chicken Dip makes a hearty addition to your snack table!
Normally, I stick to my tried and true snacks, but this time I had craving for something a little more spicy yet on the healthier side. Buffalo Chicken Dip was calling my name! You can make this dish ahead of time by mixing all of the ingredients and letting it sit for a few hours in the fridge before baking. Then just pop it in the oven when your guests arrive and serve piping hot! Enjoy!
- 2 cups shredded cooked chicken(you could also use rotissirie chicken)
- 8 oz nonfat Greek yogurt
- 4 oz nonfat or low-fat cream cheese
- ½ cup buffalo wing sauce
- ½ tsp garlic salt
- salt and pepper to taste
- ¼ cup blue cheese crumbles
- Mix all ingredients in a bowl thoroughly with the exception of the cheese.
- Bake at 350 degrees for 20 minutes.
- Pull out of the oven and top with the crumbled blue cheese.
- Broil for about 5 minutes or until the cheese is melted.
- Serve warm with chips, crackers or your favorite veggies.
Chicken Piccata with dirty rice and green beans was one of the meals I had while out of town on business last week. If your not familiar with this dish, Piccata is an Italian method of preparing meat where the meat is cut thinly, breaded and then fried in oil or butter before a pan sauce is made with the drippings, white wine, lemon juice, capers and butter. This was absolutely delicious! I may need to make a “healthier” version for the blog!
I came across these gems at a local mom and pop organic grocery store. What a find! Delicious with a rich dark chocolate flavor. I just wish they had more of a caramel taste to them. I love the fact that they’re not overly sweet. Even if you eat both, it’s only 10 grams of sugar (5 grams per cup). Check out the simple ingredient list! Ingredients: Organic Coconut, Organic Cacao, Organic Cacao Butter, Organic Coconut Sugar, Himalayan Sea Salt.
