What I Ate Wednesday – Healthy Avocado Chicken Salad

Happy Wednesday friends! This week I’m sharing a cool twist on chicken salad. You can whip up this easy Avocado Chicken Salad in a matter of minutes. Swap out the mayo for mashed avocado! The avocado gives it a healthy and highly satisfying creaminess without needing mayo. Is your mouth watering yet? 

But first, lets take a quick peek at some of my favorite eats from last week!

Breakfast

I went with a sweet and savory post workout breakfast! Something new for me! For my egg muffin sandwich, I used one whole egg, 2 slices of chicken bacon and a slice of creamy original chao vegan cheese! I baked up a batch of maple cinnamon butternut squash on the side. Sweet and savory at its best!

This Healthy Avocado Chicken Salad takes less than 15 minutes to prepare!

This sandwich is a break from the typical chicken salad sandwich and packed with healthy nutrients. This avocado chicken salad is creamy, fresh and delicious! To cut down on the prep time, I used a rotisserie chicken that I picked up at the grocery store. I took the traditional mayo out and added avocado in its place. This salad is perfect on your favorite toasted bread, on top of salad or own it’s own. It’s a filling, yet light lunch. I hope you love it as much as I do!

Healthy Avocado Chicken Salad

Serves: 4
Ingredients
  • 2 cups shredded chicken(I used a rotissierie chicken to save time)
  • 1 avocado, seeded and peeled
  • ¼ cup finely chopped sweet onion
  • ½ tsp garlic powder
  • 2 tsp lime juice
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp chopped cilantro
Instructions
  1. Place the chicken, avocado and onion in a medium bowl.
  2. Gently mash the avocado with a fork and stir it around so that everything gets well mixed.
  3. Add the cilantro, lime juice, garlic powder, salt and pepper.
  4. Add more lime juice or salt to taste.
  5. To store, place in a bowl and cover completely with plastic wrap.
  6. Serve as a sandwich, on top of salad or plain.
  7. Will keep up to 1 week in refrigerator.

Afternoon Snack

This is not your average popcorn. Icon Meals Dark Chocolate Sea Salt Power Popcorn is crazy addictive. This salty, dark chocolate coated protein popcorn is my new favorite. Think Lindt’s Sea Salt Dark Chocolate bar meets popcorn! It’s so easy to go through half a bag unless you portion it out like I did. If your not a fan of Icon’s shipping prices, check out your local Vitamin Shoppe. They just started carrying a few of the flavors! 

 

Dinner

Quick picture of part of my birthday sushi dinner! The restaurant attempted to make it somewhat festive with a lit up banana leaf! I went with an Alaskan Roll and the Monster Roll. We also shared an order of seaweed salad and a sashimi platter! This was our first time trying the sushi here. It was good but I’ll probably stick with the chinese takeout from now on.

 

Evening Snack

When you run out of Enlightened ice cream pints, the next best thing are the Frozen Hot Cocoa Bars! These are SO good! Loaded with chocolate chips and swirls of marshmallow! My grocery store just started carrying these. I may or may not have gone back for a second bar!

So so glad avocado is back on the menu for you 🙂 My favorite way to use avocado = I love having fresh guacamole with baked sweet potato rounds – you should try the combination if you haven’t yet. Favorite fast & easy lunch recipe = spinach omelet. And I love the Enlightened bars better than the pints, believe it or not! The Chocolate-Peanut Butter is my favorite.
