What I Ate Wednesday – Healthy Blueberry Cheesecake Dip

Happy Wednesday friends! After a week of getting settled in and unpacked, I’m ready to get back into the kitchen cooking. Today’s recipe is a quick and easy Healthy Blueberry Cheesecake Dip. It has five ingredients and takes less than five minutes to whip together. Yes, please!

But first, let’s take a quick peek at some of my eats from last the past week!


It has been a very long time since I ate breakfast at a Denny’s. I ordered the Fit Slam which consisted of an egg white spinach omelet with turkey bacon, an english muffin and fresh fruit. It fit the bill for road trip food and kept me full for a few hours.


Mid-Morning Snack

The Lemon Bliss bar from Muscle Milk has a soft cookie like texture to it with a slight crunch that can best be described as rice crispy like. The lemon taste is slightly tangy and tasted just like the lemon part of a homemade lemon meringue pie. This bar was awesome and I am excited to try some other flavors soon!



I’ve always had a love for Thai food! This place looks like a little hole in the wall from the road but the food is actually quite good. We started off with some thai shrimp rolls with a hoisin peanut dipping sauce.


My main course was a Chicken Pho Noodle Bowl in this heavenly broth! The broth is seasoned with ginger, salt, scallions and cilantro! I added some mung bean sprouts, lime and jalapeno to mine. Talk about flavorful! If you’ve never tried Pho before, you are missing out! Perfect comfort food for a chilly spring day.


Healthy Blueberry Cheesecake Dip

This healthier blueberry cheesecake dip is made with a secret ingredient that’s packed with protein – cottage cheese! Luckily I stocked up on a few containers of Muuna Cottage cheese before we headed south. The Blueberry flavor is one of my favorites!

This recipe comes together very quickly! I served mine with these Cinnamon & Sugar Powdered Chips from The Original Cannoli Company! Bring this fun, healthy, creamy dip to any party, and watch it disappear in minutes! Enjoy!

Healthy Blueberry Cheesecake Dip

  • 2 - 6oz containers Muuna Blueberry Cottage Cheese
  • 1 scoop vanilla protein powder
  • ¼ cup unsweetened cashew or almond milk
  • ⅓ cup fresh blueberries
  • 1 tsp.vanilla extract
  • Toppings:
  • ¼ cup unsweetened coconut
  1. Add all of the ingredients to a food processor or high-powered blender.
  2. Blend until completely smooth.
  3. Add to a serving bowl or dish.
  4. Chill until you are ready to serve.
  5. Add your favorite toppings or enjoy it plain.
  6. Store any leftovers in an air-tight container in the fridge.


We are very fortunate to have a decent clubhouse restaurant right in our gated community. I was craving seafood(I know what a surprise)! My Ahi Tuna was simply seasoned and grilled to perfection. Look at the generous portion size! They give you two 4oz pieces for dinner! Paired with a giant sweet potato and grilled veggies, it was the perfect meal!

    • Hello Liz! I’m so disappointed that I cannot find Muuna anywhere near me yet down south. Hoping they expand to at least Target or Whole Foods which are about an hour drive for me. I’m still trying to get used to a smaller kitchen with way different lighting. And yes, guac does count! I know it’s your favorite! Happy almost Friday! xo
