What I Ate Wednesday -Roasted Red Pepper and Mozzarella Stuffed Chicken

Happy Wednesday friends! It’s often a challenge to get a healthy, home-cooked meal on the table night after night. This week I’m sharing a quick and easy recipe for Roasted Red Pepper and Mozzarella Stuffed Chicken dish!

But first, let’s take a quick peek at some of my favorite eats from last week!


Simply Balanced Organic Sprouted Cinnamon and Raisin bread from Target is one of my favorites! It never gets soggy and holds up really well in all of my french toast creations. One of my favorite toppings lately is caramelized bananas!



In an effort to add more fermented foods into my lifestyle and diet, I tried Trader Joe’s Raw Sauerkraut with Persian Cucumbers for the first time. It’s mildly tart and super crunchy, ideal for topping my turkey bagel sandwich!  Sort of reminds me of a Reuben sandwich but without the sauce. Lunch was not complete without some of my favorite Alexia sweet potato puffs on the side!


Afternoon Snack

Red Velvet was the last of the 3 flavors of Optimum Nutrition Cake Bites for me to try. The coating is more of a Greek yogurt type flavoring. If you are expecting this to taste like cream cheese, you might be a bit disappointed. The Red Velvet flavor was in fact on point and pretty tasty. Roasted Red Pepper and Mozzarella Stuffed Chicken is healthy, simple, delicious and requires just 5 minutes prep!

Roasted Red Pepper and Mozzarella Stuffed Chicken is not only super simple, but it’s fresh and light! Better yet, there are just 5 ingredients! This is one of my hubby’s favorite and most requested meals! I hope you enjoy it!

Roasted Red Pepper and Mozzarella Stuffed Chicken

Roasted Red Pepper and Mozzarella Stuffed Chicken

Serves: 4
  • 4 boneless skinless chicken breasts
  • 6 ounces fresh mozzarella, sliced into 8 slices
  • 6 oz. jar of roasted red peppers sliced into 1 inch pieces
  • 4 fresh basil leaves
  • 1 TBS Italian seasoning
  • Salt and pepper for seasoning
  1. Preheat oven to 400 degrees.
  2. Grease a 9x9 casserole dish.
  3. Slice a ¼ inch slit in the long side of each chicken breast.
  4. Lay chicken breasts in casserole dish opened up.
  5. Sprinkle the insides of the chicken breast with some of the Italian seasoning and salt and pepper.
  6. Stack the roasted red pepper, basil, and 1 slice of the mozzarella on the bottom side of the chicken.
  7. Fold the top flap of the chicken over ensuring the mozzarella, basil and roasted red pepper are tucked inside.
  8. Sprinkle with the remaining Italian seasoning.
  9. Bake chicken for 30-35 minutes.
  10. Pull chicken out of oven and turn the oven to broil
  11. Top chicken with remaining mozzarella slices.
  12. Broil until cheese is browned and bubbly, about 5 minutes.


Sea salt caramel fans will  be delighted as this ice cream is true to it’s flavor. The ice cream is on the sweeter side with just a hint of saltiness. My pint didn’t have an abundance of caramel swirls in it but when you do get one, it is pure heaven on a spoon! Well done Enlightened! Adding this to my list of favorites!

  1. Ooh, excellent topping choice with the caramelized bananas, for your french toast! Also love your chicken recipe. When I’m in a crunch, omelets and stir-fry dishes are quick & easy to make. When it comes to preparing quick meals, my tip is to just be prepared as much as possible – try NOT to get into a situation where you’re not sure what to stay stocked up on (frozen vegetables, eggs, etc.). HAPPY WEDNESDAY AND FIRST DAY OF FEBRUARY!!! xo
