Welcome to this week’s What I Ate Wednesday! I have four rules for what makes a great breakfast: It needs to be healthy, tasty, quick, and easy to make. This Sausage and Pepper Egg Bake scores perfect 10’s on all four criteria plus it looks amazing as well. It’s the perfect start to a busy day!
Let’s get this breakfast party started!
Sausage and Pepper Egg Bake
This egg bake is super simple with just 7 ingredients and makes 8 huge servings! This also makes excellent leftovers for lunch and dinner during the week! Just add a salad and you have a complete meal! I hope you enjoy it!
- 18 eggs
- splash of milk
- 5 Chicken Andouille Sausage links, sliced(Amy Lu brand from Costco), can sub your sausage of choice
- 2 medium peppers(red, orange or yellow), diced
- 1 medium red onion, diced
- 1 TBS olive oil
- 1 cup low fat, shredded cheddar cheese
- In a large bowl, whisk together the 18 eggs.
- Add a splash of milk.
- Add salt and pepper to taste.
- In a large skillet, saute the peppers and onions in a little bit of olive oil.
- Since the sausage is already cooked, add this to the pan last.
- Pour the eggs in a greased 9 by 13 Pyrex dish.
- Add in the sauteed veggies and sausage.
- Stir in cheddar cheese.
- Make sure everything is distributed evenly.
- Bake in a 350 degree oven for about 35-40 minutes or until the eggs are set and golden.
Here are some of my favorite meals from last week!
Morning Snack: I tried the blueberry muffin Quest bar for the first time. This is one of the Quest Lab products that I received in the mail a week ago. Right off the bat you will notice it has dried blueberries, chunks of graham cracker and white chocolate. I really loved this bar! The blueberry flavor is very authentic and offers a tart yet sweet taste that definitely makes this unique. I would definitely rate this a 9 out of 10! I’m sure this would also taste pretty awesome warmed up in the microwave!
Lunch: My salad was from a local pizza restaurant near work. I ordered the Caprese salad minus the tomatoes(not a fan) and had them substitute sweet peppers instead. Not to shabby for a pizza place. They obviously do not skimp on the chicken either- give me all the protein!
Dinner: I have been really addicted to stir fries lately. Mostly due to getting home a bit later than usual the past few weeks. I have box upon box of Trader Joe’s Jasmine Rice in my freezer. So simple to make! Just 3 minutes in the microwave and you have perfect rice every time. Another key time saver for me is keeping frozen cooked shrimp in the freezer to add to stir fries. To spice things up, I used a Thai green curry sauce from Trader Joe’s that is one of my favorites!
Evening Dessert: I revisited my childhood that evening with my cookie themed dessert. I LOVE Cookie Crisp cereal, this was one of my favorites growing up. I sprinkled a handful on top of my Arctic Zero Cookie Dough Chip. Dessert is not complete without PB! This new flavor of Lion’s Choice Toasted Marshmallow peanut butter is too die for! Definitely give it a try!
